- 1 doz Hard-Boiled Eggs
- 1 Cup Finely-Chopped Shrimp
- 24 Cocktail Shrimps, whole
- 3 tbs Mayonnaise
- 1 tsp Dried Mustard
- Lemon Juice
- Salt and Pepper
- Dried Smoked Paprika powder
Boil the eggs,until they are hard boiled. If you don’t know how to do that, hold on, I’ll post something about that later on.
Take off the shells, cut the eggs in half, spread the whites on a plate or baking sheet and reserve the yolks.
In a food processor, put the yolks, the shrimps and all the other ingredients (except the whole shrimps and the paprika, which you are saving for later) and mix until you get a smooth paste. If at all possible, use real mayo, not Miracle Whip. No reason, I just think that Miracle Whip is kind of gross.
Put the paste in a ziplock bag and cut off one of the corners so you can squeeze the paste out. Fill all the egg whites with the paste, then garnish each egg with one of the whole shrimps you have saved from the whirling blades of the food processor. Sprinkle with powdered paprika to taste.
Needless to say, this isn’t exactly what the doctor ordered, especially if you have high cholesterol, like Renei does, so don’t be a pig and eat the whole thing. Bring it to a party and share it with friends or something.

This will be my next recipe to try, on my mother! , hehe…..I would try the curry ( I LOVE CURRY! A highly underated dish (es) here in the US) but my mother’s palate is just to delicate, so stuffed shrimp eggs it will be! more to come on the results……

My mother has come and gone….and no eggs where made…..But I do have a few excuses…eerrr…reasons for this. First, my blender is broken ( although my Aunt kindly offered the use of hers ) . However, it was my mother’s ever so faint ( only a momma’s girl like would even see it ) sneer of mushed up shrimp paste. I tried, in vain, to make this sound ssooo yummy. JUST LIKE DEVILED EGGS! She just nodded ever so faintly and said she would try whatever I made. What a wonderful Mother she is! I love her to pieces, but I know her taste buds and she knows my cooking, the two just really dont hand in hand. But I have another test subject in mind…..muhahahahaha……
