Grunman’s Scorchin’ Curry

  • 1 lb Chicken or Beef or Veal
  • 3-4 Onions
  • 2-3 Garlic Cloves
  • 3 Tbsp Curry Powder (Sharwood’s)
  • 2-3 Tbsp Mango Chutney (Sharwood’s Bengal Spice)
  • 1 Big Tsp Tomato Paste
  • 1 Tsp Curcuma
  • 2 Tbsp Lemon Juice
  • 1 1/2 Cup Chicken broth (more or less)
  • Olive Oil

This dish is very easy to make and will certainly loosen the skin at the top of your mouth, if you cook it properly.

Dice the onions and crush (or chop) the garlic. Watch out for those fingers, you’ve only got 10 (thumbs are the most important!). Fry the onions and garlic in olive oil on high heat in a big non-stick frying pan that’s got a cover.

Cut the meat of your choice- I recommend chicken to start - in bite-size morsels. Once the onions are nice and translucent, add the meat and continue frying for a couple of minutes. Add the curry powder, mix well and keep frying. You can reduce the heat to medium.

By the way, I know it looks like a LOT of curry powder, but put it in anyways.

Once the meat is nicely browned (exterior is cooked) add the chicken broth, enough to barely cover the meat and onions, and toss in the rest of the ingredients. Mix well, reduce the heat to very low, cover and cook for at least 45mn.

Signs that your Scorchin’ Curry is ready:

  • The onions have started disintegrating (that’s a good thing, trust me)
  • There is no more visible liquid (make sure to stir)
  • When you stir, Grunman’s Curry kind of sticks to the bottom
  • When the neighbors knock on your door to complain about the smell

Watch for those signs. Depending on how much you made, it can take MUCH longer to cook, up to 1 1/2 hours. Don’t worry about it and have a scotch.

One thing to remember: making Grunman’s Scorchin’ Curry will stink up your home like nothing else. If you live in an apartment building, it will smell in the halls. Most of your clothes will smell like curry, for days afterwards. If you’ve got a big business meeting the next day, stock up on cigarettes to mask the smell. it’s the only thing that “works”. I’ve been there.
